Heat oven to 350 degree. Grease and flour a 9 x 5 x 3 inch loaf pan. Sift flour, baking soda, salt and spices into a mixing bowl. Set aside. Put eggs, butter, apple juice, vanilla and sugar into blender and blend until smooth. Add apples and nuts, and process only until apples and nuts are coarsely chopped. Empty into flour mixture and mix well. Turn into prepared pan and bake 45 to 55 minutes or until cake tester comes out clean. Frost with vanilla glaze ( see desserts). |
