Separate eggs and beat whites to stiff froth. Combine flour, cheese, and salt and fold into whites. Arrange toast on cookie sheet. Pile a mound of egg white mixture on each slice of toast. Make small well in each mound, place an unbroken egg yolk in well.
Bake 10-12 minutes at 300-325 degrees, or until set. Garnish with parsley.
Note: Parmesan can be substituted with any other dry cheese.
