|Make thick white sauce of shortening, flour, milk and salt. Cool. Stir in parsley and meat. If mixture is not thick enough to handle, add a few cracker or bread crumbs. Shape as croquettes, dip in fine crumbs, then in beaten egg and water (salted), and crumbs again.|
Fry in deep shortening, 385 degree, until golden brown. Drain on absorbent paper. Serve with medium thick white sauce to which capers, peas or pimientos have been added; or with well-seasoned tomato sauce.
