Easy Beef Enchiladas

  Yield/Servings: 6 servings  
Ingredients:
2 1/2 cups chopped cooked beef
1 large onion, chopped
1/4 cup raisins
1 (1 1/2 oz) pkg. taco seasoning mix
1/4 tsp. alt
1 (15 oz.) can tomato sauce
1 cup water
Cooking oil
12 tortillas
1 cup grated sharp cheddar cheese
1/4 cup finely sliced green onion
 
 
Instructions:
Combine cooked beef, onion, raisins, taco seasoning mix and salt in saucepan. Stir in tomato sauce and water. Cook slowly, stirring occasionally, 30 minutes.

Cover bottom of small frying pan with oil to 1/4 inch depth. Fry tortillas quickly, one at a time, on both sides in hot oil. drain on absorbent paper and spread each with 12 tbs. of sauce from meat mixture.

Place 1 tortilla, sauced side down in 13 x 9 inch baking dish. top with 1/4 cup meat mixture and fold two edges of tortilla enclosing to overlap at top, meat mixture. Repeat with other 11 tortillas. Sprinkle cheese over tops off all. Bake in preheated moderate oven, 350 degree, 5-10 minutes or until cheese melts. Sprinkle each serving with green oinion.
