Beef Enchilada Casserole
|1 lb. sharp cheese|
1 lb. hamburger
1 clove garlic
1 medium onion, chopped
12 can cram of chicken soup
2 can cream of mushroom soup
1 dozen corn tortillas
12 can Mexicorn
1 can enchilada sauce
1 can green chilies, cut in strips (optional)
|Cook the hamburger with garlic and onion until done. Dip tortillas in warm enchilada sauce and line greased pan or casserole with tortillas.|
Add in layers: 1/2 meat, 1/2 cheese, 1/2 soups, 1/2 corn, and 1/2 chilies. Repeat. Cover and bake at 375 degrees 30-40 minutes. A 13 x 9 inch pan may be used and covered with foil or a large casserole would be OK.
Comments: This recipe comes from Hoe's sister in New Mexico and it's an old time family favorite.
