4 lbs. spareribs 2 1/2 tsp. salt 1/4 tsp. pepper 1 1/3 cups tomato juice 1 - #2 1/2 can pineapple | 2 tbsp. vinegar 1 green pepper, chopped 1 pimiento 3 tbsp. flour 3-4 tbsp. cold water |

Instructions: |
Wipe spareribs and cut into 2-rib sections. Brown in heavy kettle in their own fat if possible, otherwise add 2 tbsp. shortening. Sprinkle with salt and pepper. Add tomato juice, pineapple juice, pineapple cut into small pieces, and vinegar. Cover kettle and cook slowly 1 1/2 hours. At end of 1 hour add green pepper; 10 minutes before meat is done add pimiento. When done thicken gravy with flour mixed with water. |
