Carrot and Raisin Salad |

4 large carrots 1/2 cup seedless raisins 3/4 tsp. salt 1/2 cup pecans or peanuts, chopped black pepper 2 tsp. grated lemon peel 1 tbs. lemon juice 1 cup sour cream | |

Instructions: |
Scrape well the carrots and place on ice for 1 hour. Grate carrots coarsely in bowl. Add and mix lightly: raisins, salt, pecans or peanuts, pepper, lemon, and lemon juice. Put in salad bowl. Pour 1 cup or more cultured sour cream over it and serve. Serves 4 |
