3/4 cup raw soybeans 3/4 cup raw rye or wheat berries 1 cup cottage cheese scallions carrots cucumber red onion green pepper stalk of celery alfalfa sprouts tomato
Marinade: 1 t. Tamari 1 tsp. fresh fennel or dill 1/4 tsp. dry mustard 1/2 cup cider vinegar 1/2 cup mayonnaise 1 tbs. lime or lemon juice 2 tbs. dry white wine 1/2 cup freshly chopped parsley dash of pepper dash of basil 2 cloves crushed garlic (optional)
Instructions:
Cook soybeans and berries until tender and drain. While beans chill in marinade sauce, dice up scallions, carrots, cucumber, red onion, green pepper, and stalk of celery. Combine everything with 1 cup cottage cheese. Garnish with alfalfa sprouts and tomato.
