1/2 cup white sauce Grated rind 1 small lemon 2 tbsp. prepared horseradish 1 tsp. minced watercress or parsley 2 tbsp. butter
Instructions:
Place cleaned fish on well-greased clean cloth, lay in steamer and steam until tender, allowing 15 minutes per lb. Remove from cloth, place on platter, serve with Lemon Horseradish sauce.
Sauce: To white sauce add lemon rind and horseradish, cook 5 minutes, press through fine sieve. Reheat, add minced parsley or watercress and butter.
