Beat together butter and sugar until light and fluffy. Add egg and vanilla, beat well. Sift together flour, soda and salt, add to creamed mixture, mixing until thoroughly combined. Stir in granola and nuts. Stir in marshmallows.
Spread dough evenly into a greased and floured 13 x 9 pan. Dough will be stiff. Sprinkle chocolate chips over batter. Bake 22-25 minutes at 375 degrees. Cool. Cut into bars.
Recipe is easy to double. Bake in 12 x 18 pan for 30 minutes. May also be made using quick or old-fashioned oats, uncooked, in place of granola. |
