Potato Doughnuts |

Ingredients: |
2 cups hot mashed potatoes 1 cup flour, sifted 2 tsp. baking powder 1/2 tsp. salt 1 tsp. minced parsley 1 egg, slightly beaten | |

Instructions: |
Mix ingredients together, place the resulting "dough" on floured board and roll out 1/2 inch thick. Cut into shape with doughnut cutter, fry until golden brown in hot fat, 385 degree. They will fry up double thickness. Drain on absorbent paper. |
