3/4 cup milk 6 tbsp. shortening 3/4 tsp. salt 1 1/4 cup bread flour 4 eggs 1 cup grated cheese
Bring milk, shortening, and salt to boil. Add flour, stirring vigorously. Cook, stirring constantly, until mixture does not cling to pan sides. Remove from fire and add eggs, one at a time, beating until smooth before next egg is added. Add cheese. Spread in shape of eclairs on cookie sheet, sprinkle with grated cheese. Bake 12-15 minutes at 375 degrees. The outside crust should be soft and the inside creamy. Fill as desired.
