4 cucumbers, sliced unpared 4 tbsp. butter 2 tbsp. flour 1/2 cup milk 1 cup cream
2 tsp. salt 1/4 tsp. pepper 2 tbsp. chopped parsley 2 tbsp. grated onion 1 cup bread crumbs
Slice the cucumbers. Make a white sauce of the butter, flour, milk, cream, salt and pepper. Add parsley and onion, cook sauce in double boiler 15 minutes. Place sliced cucumbers in buttered casserole, pour the sauce over them, top with crumbs, and bake in moderate oven, 375 degrees, 35 minutes.
