Soy Loaf

  Yield/Servings: 6-8 servings  
Ingredients:
1 1/2 cups soy grits
2 tbsp. oil
1/4 cup wheat germ
1 1/2 tsp. celery salt
3 1/2 cups boiling water
1/3 cup grated carrot
1/3 cup minced green pepper
1/3 cup minced onion
1 tsp. sea salt
2 eggs, lightly beaten
2 cups bread crumbs
 
 
Instructions:
Heat 1 tbs. oil in a frying pan on medium heat. Add soy grits and stir for a minute, quickly add wheat germ and celery seed; stir into boiling water and reduce heat to low. Simmer, uncovered, stirring as needed until water is completely absorbed. This can take 10-15 minutes or about 1 hour, depending on the type of soy grits used. Preheat oven to 350 degree.

Toss vegetables with salt, 1 tbs. oil, eggs, and bread crumbs in that order, then combine with cooked soy mixture and mix thoroughly. Press into a well-oiled 9 x 5 x 3 inch loaf pan and bake at 350 degree for 40 minutes.

For a colorful extra touch place slices of tomato or red and/or green pepper in bottom of pan before baking.

Allow to cool for 20 minutes or more, then loosen loaf from sides of pan with a knife or spatula and carefully invert over a platter to serve.

Serve hot or allow to cool further for easier slicing.
