Place rice in bowl. Mix in curry powder and salt as strong as you like. Use your hands. If you like hot food, add red pepper or chilies. Pour some oil into a pan which has a lid. Into this put some whole mustard and whole cumin seeds. Cover with lid and pop like popcorn, being careful not to cook too long. Remove from heat until seeds calm down. Add onions and return to heat. Stir and brown the onions. Add rice mixture and fry, stirring occasionally. Sprinkle with lemon juice and mix it in just before removing from heat. Garnish with fresh coriander leaves if desired. |
