Light Banana Bread

908Bread/Rolls
  Yield/Servings: 1 loaf  
Ingredients:
1 3/4 cups sifted flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 cup butter
2/3 cup sugar
2 eggs, well beaten
1 cup mashed ripe bananas (2-3)
 
 
Instructions:
Sift together flour, baking powder, soda and salt. Beat butter until creamy. Add sugar gradually and continue beating until light and fluffy. Add eggs and beat well. Add flour mixture alternately with bananas, a small amount at a time, beating after each addition until smooth. Turn into a well-greased 9 x 5 x 3 inch loaf pan. Bake at 350 degree for 1 hour and 10 minutes or until done.

Comments: I usually use 3 or 4 bananas to make this bread light and fluffy :) Almost like a cake in texture.
