Mary's Scotch Short Bread
|1 1/2 cups butter|
1 cup powdered sugar
4 cups sifted enriched flour
|Cream butter thoroughly. Add sugar gradually, bating constantly, then work in flour with hands. Press into 3 greased pie pans 1/2 inch thick. Prick with fork.|
Bake in 300 degree oven 40-45 minutes. Cook wrap in waxed paper. Let age several weeks.
Notes: Use 1/2 butter to make them fluffier.
