Banana Spice Cake

Ingredients:
2 1/4 cups cake flour
1 2/3 cup sugar
1 1/4 tsp. baking powder
1 tsp. salt
1 1/4 tsp. baking soda
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
3/4 tsp. cloves
2/3 cup shortening
2/3 cup buttermilk
1 1/4 cups mashed banana
2 eggs
1/2 cup semi-sweet chocolate pieces
1 tsp. butter
1 large banana (sliced)

Seven Minute Frosting:
3 egg whites
1 cup sugar
1/3 cup light corn syrup
3 tbs. water
1/4 tsp. cream tartar
1 tsp. vanilla
 
 
Instructions:
Heat oven to 350 degrees. Grease and flour three 8 x 1 1/2 inch or two 9 x 1 1/2 inch layer cake pans. Sift dry ingredients into mixing bowl. Add shortening, buttermilk, and mashed bananas. Beat 2 minutes at medium speed or 300 strokes by hand. Add eggs; beat 1 minute. Scrape bowl frequently. Pour into prepared pans. Bake 30 minutes or till cake tests done.

Melt chocolate and butter; cool. Spread one layer with frosting; cover with banana slices; top with second layer. Frost sides and top of the cake with remaining frosting. Dip back of tsp. into cooled chocolate; make deep swirls in frosting.

Frosting:
Blend egg whites, sugar, corn syrup, water, and cream of tartar in top of double boiler. Beat rapidly with rotary beater over boiling water until mixture stands in stiff peaks. Remove from heat; beat in vanilla. Enough to fill and frost two 8 or 9 inch layers.

NOTE: Cake flour can be substituted with 2 cups all purpose flour.
