Prune Nut Bars

  Yield/Servings: 32 bars  
Ingredients:
1 cup sifted flour
1 cup sugar
1/2 tsp. salt
1/4 tsp. baking powder
1/2 cup oil
1/4 cup milk
2 eggs
1/2 tsp. vanilla
1/2 tsp. grated lemon rind
1 cup chopped walnuts
1 cup finely chopped prunes, uncooked
 
 
Instructions:
Grease 13 x 9 x 2 pan. Stir together in a large bowl flour, sugar, salt and baking powder. Make a well and add in order: oil, milk, eggs, vanilla and lemon rind. Beat with spoon until smooth. Add nuts and prunes, mix well.

Turn into prepared pan. Bake in 350 degrees oven 35-40 minutes or till light brown. cut into bars while warm. Makes 32 (about 2 1/4 x 1` 1/2 inch) bars. I frosted these with a powdered sugar glaze -- they're good!
