Roast Goose, Apple Stuffing

Ingredients:
10 lb. goose
salt
pepper
poultry seasoning
1 quart bread crumbs, coarse and dry
1/2 cup butter
1 quart chopped, pared apples
1 medium-sized onion, chopped
1 1/2 tsp. salt
1 cup chopped celery
1/2 tsp. celery salt
1 tsp. paprika
1/4 tsp. pepper
1/8 tsp. cloves
1/4 tsp. cinnamon
1 cup boiling water
baked oranges
Black Morocco grapes
Celery leaves
 
 
Instructions:
Rub a young, thoroughly clean goose inside and out with salt. pepper, and poultry seasoning, let stand over night in refrigerator. Next day, fill with stuffing. To make stuffing, mix bread crumbs with melted butter, the add apple, celery, onion and seasonings. Moisten with boiling water. Stuff into goose, sew and truss.

Roast about 2 1/2 hours, the first 15 minutes at 500 degree, remaining time in moderate oven, 350 degree. Allow 20 minutes per pound for a young goose, 25 minutes for older one.

Garnish platter with baked oranges and grapes. Decorate the stuffing opening with celery leaves.
