Chow Mein Noodle Casserole

  Yield/Servings: 4 servings  
Ingredients:
1 large onion
3 stalks celery
1 green peppers
2 cups leftover pot roast or 1 lb. ground beef
2 tbs. butter
1/2 cup water
1/2 tsp. salt
dash of pepper
1 (3 oz.) can chow mein noodles
1 (10 1/2 oz.) can condensed mushroom soup
 
 
Instructions:
Chop onion, celery and green pepper. Chop leftover beef in small cubes. Cook beef in 1 tbs. butter for several minutes. If using ground beef, cook until brown and drain fat. Transfer beef to a 2 quart casserole. Melt remaining butter in pan, add chopped vegetables and cook until crisp tender. Stir in soup, water, salt, and pepper. Pour into casserole with beef and mix well.

Cover and bake in 325 degree oven for 30 minutes. Sprinkle surface with noodles and continue baking for 10 minutes.
