Ingredients: |
Biscuit dough for crust (1) 1 quart or large can tomatoes 3 tbs. corn starch 1 tsp. oregano 1/2 tsp. sage or rosemary 1 tsp. parsley 1 tsp. seasoned salt 1 tsp. garlic salt, powder or fresh minced garlic 2 cups grated cheese 1 lb. ground beef (optional), crumbled and fried 3 cups of any combination of favorite vegetables. Instructions: |
Mix up biscuit dough and spread half of it in a 9 x 12 inch, lightly greased pan, pushing the dough up the sides about 1/2 inch. Mash canned tomatoes in a sauce pan. Stir the corn starch into about 1/4 cup of the tomato juice. Bring the tomatoes to a boil. Mix in the cornstarch mixture and stir until it thickens. Add seasonings. Let simmer while preparing cheese, hamburger and vegetables.
Put about 1 cup tomato mixture on top of biscuit dough. Layer beef, 1 1/2 cups of cheese and all the vegetables then add all but one cup of the tomato mixture. Roll out the rest of the biscuit dough to the size of the pan, put over top and pinch down to bottom crust.
Spread remaining sauce over the top crust. Bake at 375 degree for 35 minutes. Sprinkle with remaining cheese an bake 5 minutes more. 10 servings.

(2) Vegetables can be fresh, frozen or canned. Onions, broccoli, zucchini, spinach, carrots, and cooked dry beans. |
