Salmon Cutlets |

Ingredients: |
4 tbsp. shortening 5 tbsp. flour 1/2 tsp. salt 1 cup milk 2 cups flaked salmon 1 tbsp. lemon juice 1 tbsp. minced onion 1/2 cup sifted bread crumbs Few grains pepper 2 eggs, slightly beaten with 2 tbsp. water | Spinach Sauce: 1 1/2 cups white sauce 1/3 cup minced, cooked spinach salt pepper paprika vinegar |

Instructions: |
Make a white sauce of shortening, flour, salt and milk. Remove from heat, add salmon, lemon juice, pepper, onion and crumbs. Spread in shallow pan and chill.
Cut with 2 1/2' biscuit cutter, roll in bread crumbs, dip in beaten egg, then crumbs again.
Fry in hot shortening until brown (shallow fry or deep fry). Drain on absorbent paper. Serve with Spinach Sauce.
Spinach Sauce: Mix together and add a little vinegar. |
