|4 tbsp. shortening|
5 tbsp. flour
1/2 tsp. salt
1 cup milk
2 cups flaked salmon
1 tbsp. lemon juice
1 tbsp. minced onion
1/2 cup sifted bread crumbs
Few grains pepper
2 eggs, slightly beaten with 2 tbsp. water
1 1/2 cups white sauce
1/3 cup minced, cooked spinach
|Make a white sauce of shortening, flour, salt and milk. Remove from heat, add salmon, lemon juice, pepper, onion and crumbs. Spread in shallow pan and chill.|
Cut with 2 1/2' biscuit cutter, roll in bread crumbs, dip in beaten egg, then crumbs again.
Fry in hot shortening until brown (shallow fry or deep fry). Drain on absorbent paper. Serve with Spinach Sauce.
Mix together and add a little vinegar.
