12 smelts Salt and pepper Lemon juice 1 tbsp. chopped onion 1 tbsp. butter
1/4 cup chopped cooked mushrooms 1/4 cup chopped oysters, cooked 1/2 tsp. chopped parsley 3 tbsp. thick white sauce 1/2 cup cooked chopped fish of any kind
Clean and dry the smelts. Stuff with dressing made by cooking onion in butter 3 minutes, then adding mushroom, oysters, parsley, white sauce and fish. Sprinkle with salt and pepper, brush with lemon juice, place on buttered shallow pan and cover with greased paper. Sprinkle top of fish with crumbs. Bake until crumbs are browned. Serve with any kind of smooth sauce.
