To freeze zucchini for later use in zucchini bread, cookies, or other dishes, use medium size vegetables.
Wash and grate using a medium to coarse grater. Immediately freeze in moisture-vapor-proof containers.
It is recommended that the shredded zucchini is to be used while still in a frozen, or semi-frozen state. If it is allowed to thaw completely, it is too watery for most recipes.
Hint: Try using one of the new health food cereals that contain honey, oatmeal, nuts and raisins or any other combination as a substitute for all nuts, and or raisons in cookies, breads, and cakes. Much cheaper. Zucchini and apple breads are delicious this way. |
