2 cups mashed hot sweet potato 1/2 cup milk 1/2 tsp. salt 4 eggs, well beaten
To potatoes add milk, salt and eggs. Turn mixture into well-greased frying pan. Cook until browned on bottom. Place in moderate overn, 325 degrees, until top is browned, about 15 minutes. Fold over like omelet, onto hot platter, and serve with hot melted butter.
