Yankee Doughnuts

  Yield/Servings: 8 to 10 doughnuts  
Ingredients:
2 cups Bisquick baking mix
2 tbsp. sugar
1 tsp. vanilla
1 egg
1/4 cup milk
1/4 tsp. nutmeg
 
 
Instructions:
Heat fat or oil (3 to 4 inch) to 375 degree in deep fat fryer or kettle. Mix all ingredients until smooth. Gently smooth dough into a ball on floured cloth-covered board. Knead 8 to 10 times. Roll dough 1/4 inch thick. Cut with floured doughnut cutter. Drop rings into hot fat. Fry about 1/2 minute on each side or until golden brown. Drain. If desired, spread with Chocolate Glaze (see Desserts).

For chocolate doughnuts: Add 1/4 cup cocoa with baking mix. Increase sugar to 1/4 cup and milk to 1/3 cup. Omit cinnamon and nutmeg.
