Harvest Orange Batter Bread

  Yield/Servings: 1 loaf  
Ingredients:
3/4 cup boiling water
1/4 cup firmly packed brown sugar
3 tbs. butter
1 tsp. salt
1 pkg. active dry yeast
1/2 cup warm water
1 cup Quaker Oats, uncooked
1 egg
2 1/2 to 3 cups all-purpose flour
3/4 cup chopped walnuts
2 tsp. grated orange rind
 
 
Instructions:
Combine boiling water, sugar, butter and salt in large bowl, stirring until butter melts; cool to lukewarm. Dissolve yeast in warm water. Stir dissolved yeast, oats and egg into lukewarm mixture. Add 1 cup flour, walnuts and orange rind; beat until smooth. Stir in enough remaining flour to make stiff batter. Place in greased bowl. Cover; let rise in warm place about 1 1/2 hours or until doubled in size.

Turn batter into well-greased 9 x 5-inch loaf pan. Let rise, uncovered, in warm place about 45 minutes or until nearly double in size. Bake in preheated moderate oven 375 degree 35-40 minutes. Remove from pan; cool at least 1 hour before slicing. Makes 1 loaf.

To freeze: Wrap securely; store in freezer 2 to 3 months. Thaw, wrapped at room temperature, 2 to 3 hours.
