Ingredients: | |
1 cup cooked spinach, chopped 1 1/2 tbsp. flour 2 tbsp. butter 1/2 cup cream 1/2 tsp. salt 4 eggs, separated | |
Instructions: Make a sauce of butter, flour and cream, season with pepper and salt, let bubble gently. Add to spinach. Beat egg yolks thick and lemon-colored, add salt and dash of pepper. Beat egg whites stiff, fold them into egg yolks, pour mixture into hot buttered omelet or frying pan. | |
