Mexican Cheese Pie

  Yield/Servings: 6-8 servings  
 
Ingredients:
1 1/2 pounds Tofu
1 cup buttermilk or yogurt
1 can (6 oz.) tomato paste
1 tsp. honey
2 eggs
1 1/4 tsp. salt
1/2 - 3/4 tsp. cumin (toasted)
1/4 tsp. coriander or oregano
1/4 tsp. cayenne
2 tbs. cornmeal or whole wheat flour
1 medium onion
1 1/2 cups cheddar or Swiss, grated
1/4 cup parmesan, grated
2 cups Monterey jack cheese, grated
1 can (4 1/2 oz.) whole green chilies chopped
 
Instructions:

Prepare you favorite basic single 10 inch crust. Bake 450 degree for 5 minutes.

Mix well until smooth: Tofu, buttermilk or yogurt, tomato paste, honey, eggs, salt, cumin, coriander or oregano, cayenne, and cornmeal or whole wheat flour.

Stir in onion (chopped fine), cheddar or swiss cheese, jack cheese, and green chilies (chopped).

Turn into prepared crust or pan and sprinkle top with cheeses. Bake at 325 degree for 1 hour. Let stand 15 minutes.
