Mutton Cutlets | |

Ingredients: | |
3 lbs. mutton 4 tbsp. flour 1 tbsp. minced parsley 1/2 tbsp. poultry seasoning 1 1/2 tsp. salt | |
Instructions: Cut the mutton into cutlet shapes, and flatten the pieces out. Rub with cut garlic or onion slice, dip into the flour mixed with the seasonings, and fry in hot fat in frying pan. Bake a brown gravy by adding 2 tbsp. flour to the fat in the pan, then blending it with 1 1/2 cups hot water. Season with meat sauce or chopped sweet relish. | |
