Braised Rabbit

  Yield/Servings: 6 servings  
2 - 1 1/2 lb. rabbits or 1 - 4 lb. rabbit
1 medium onion, chopped
2 bay leaves
sage to taste
thyme to taste

Wash and cut up rabbit. Dredge well with seasoned flour, then brown pieces in hot shortening. Place in baking dish, add onion, bay leaves, sage and thyme and water to cover.

Cook in moderate oven 375 degrees, until tender, (about 1 hour for 2 1/2 lb. and 2 hours for 4 lbs. Before serving, thicken gravy with flour.
