Chicken Chow Mein

  Yield/Servings: 4 to 6 servings  
2 cups shredded, cooked chicken
1/4 cup olive oil
1 large sweet onion
1 tsp. salt
1 cup celery slices
1 8-oz. can mushroom pieces
1 can bean sprouts
1 cup chicken broth
1 tbs. honey
1/4 cup soy sauce
Chinese noodles

Heat oil in fryer. Saute sliced onion and celery until lightly browned, add mushroom pieces. Cover and cook over low heat 15 minutes. Add remaining ingredients and heat through.

Serve over fried noodles. If desired, thicken slightly by blending 3 tbs. flour with chicken broth before adding.
