Low-Sodium Mayonnaise

  Yield/Servings: 1 cup  
 
Ingredients:
1 cup vegetable oil
1 whole egg plus 1 egg yolk
1 1/2 tsps. dry mustard
1/4 tsp. salt substitute, seasoned
3 tbsps. lemon juice
White pepper to taste
Cayenne pepper to taste
 
Instructions:

In blender, combine 1/4 cup oil, eggs, mustard, salt substitute, pepper and cayenne. Blend until thickened. Continue blending very slowly adding 1/2 cup more of oil, lemon juice and then remaining oil until thoroughly combined.

Refrigerate.
