Swiss Steak

    Cook Time: 2 hours   Yield/Servings: 6 servings  
 
Ingredients:
3 lbs. (1 1/2-inch thick) round steak
1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons fat
1 can tomatoes
1 small onion, minced
6 carrots, scraped
6 potatoes, peeled
 
Instructions:

Mix flour and seasoning and pound well into meat.
Melt fat in Chicken fry pan.
Brown meat well in fat on one side.
Turn and place potatoes and carrots around meat.
Add tomatoes and onions.'`Cover and cook over low heat 1 1/2 hours.

Serves 6 with meat for 2 meals.
