Calico Peach-Pineapple Conserve

  Yield/Servings: 11 - 6 oz. glasses  
1 1/4 cups peaches, chopped
1/3 cup maraschino cherries, chopped
1 can (8 1/2 oz.) crushed pineapple
1/4 cup lemon juice
1 1/2 cups chopped nuts
7 1/2 cups sugar
1 bottle Certo pectin

Peel and pit 1 1/4 cups fresh peaches. Chop fine or grind. Measure 2 1/4 cups into a large pan - - add cherries, nuts, pineapple, and lemon juice. Add sugar to fruit-mix well. Bring to a full rolling boil over high heat. Boil hared 1 minutes stirring constantly. Remove from heat and stir in certo. Skim and stir for 5 minutes. Ladle into glasses. Cover with lids or 1/8 inch hot paraffin.

Alternate Method:

Using (MCP) or Sure Jell Pectin. Mix fruit and nuts together -- add dry pectin, bring to boil. Stir in sugar, bring to full rolling boil. Boil hard 1 minute stirring constantly. Cool and skim for 5 minutes. Ladle into jars. Makes approx. 11 - 6 oz. glasses.
