2 cups tomatoes 1 small onion 1 4-ounce can pimientos, drained 1 green pepper, cut in pieces 1/2 cup cubed Cheddar cheese 1/2 tsp. salt Dash of cayenne 1 1/3 cups quick-cooking rice | |
Instructions: Heat oven to 350 degree. Grease a 1-quart casserole. Put all ingredients except rice into blender. Chop vegetables coarsely. Mix with rice. | |
