Bran Muffins

  Yield/Servings: 12 muffins  
1 cup sifted flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 egg
2 tbs. soft shortening
1/4 cup sugar or molasses
3/4 cup milk
1 cup bran

Heat oven to 400 degree. Grease muffin tins. Sift flour, baking powder, and salt into a bowl. Set aside. Put egg, shortening, sugar, milk and bran into blender and mix until well blended. Pour over dry ingredients in bowl and stir only until the flour is moistened.

Fill muffin tins 2/3 full. Bake 20 to 25 minutes.
