Cranberry Corn Muffins

  Yield/Servings: 12 muffins  
2/3 cup milk
1 egg
1 1x1 inch pieces orange rind
1 12-ounce package corn muffin mix
1 tbs. sugar
3/4 cup raw cranberries

Heat oven to 400 degree. Grease muffin tins. Put milk, egg, orange rind, muffin mix and sugar into blender and mix until well blended. Gradually add cranberries. Use rubber spatula to help guide cranberries to processing blades, if necessary. Mix only until cranberries are chopped. Fill prepared tins half full and bake 12-15 minutes. Cool in pan a few minutes, remove and glaze with Vanilla Glaze (see desserts).
