French Orange or Lemon Puffs

  Yield/Servings: 18 puffs  
 
Ingredients:
1 egg 2 tbs. sugar
thin rind of 1 orange or 1 lemon
1 cup milk
2 cups biscuit mix
Topping:
1/3 cup butter, melted
1/2 cup sugar
1 tsp. cinnamon
 
Instructions:

Heat oven to 400 degree. Grease muffin tins well. Pour egg, sugar, rind and milk into blender and mix until rind if chopped fine. Remove cover and add biscuit mix, continue to mix only until mixture is smooth. Use rubber spatula to keep ingredients flowing to blades. Fill muffin tins 1/2 full. Bake 12 -15 minutes, until lightly browned. Mix sugar and cinnamon. While muffins are hot, dip into melted butter, then into sugar mixture. Omit cinnamon when preparing lemon puffs.
