Bacon Muffins

2 cups sifted flour
2 tsp. baking powder
2 tsp. sugar
1/2 tsp. salt
1 egg, beaten (or 3 yolks)
1 cup milk
1/4 cup hot bacon fat
6 slices cooked bacon, cut fine

Combine ingredients in order given, the chopped bacon last. Save a little of it and sprinkle on top of each muffin if desired.

Bake in 12 well-greased muffin pans, in moderate oven, 400 degree, about 20 minutes. If small pans are used, bake only 10-12 minutes.
