Lamb Souffle

2 egg yolks
1 3/4 cups milk
1 tbsp. flour
1 tsp. salt
Pepper to taste
1 tbsp. butter
1 1/2 cups cold minced lamb, cooked
2 egg whites, beaten

Beat yolks, add milk, flour, salt, pepper, butter and lamb; cook until slightly thickened. Cool; then fold in egg whites. Bake in well-greased casserole in moderate oven, 375 degrees, about 20 minutes.
