Mutton-Tomato Bredee

  Yield/Servings: 6 servings  
 
Ingredients:
3 lbs. mutton, cut up
3 onions, sliced
2 tbsp. shortening
12 tomatoes, skinned and cut up
 
Instructions:

Sprinkle meat with salt, pepper and flour. Brown the onions in hot shortening, add meat and tomatoes, cover and simmer until meat is tender, about 2 1/2 hours. Thicken any gravy which may be in the pan. (The tomatoes should provide enough moisture, but if more is required, add hot water from time to time).
