Baked Lamb Loaf

  Yield/Servings: 6 servings  
1 1/2 cups bread crumbs
1 cup milk
3 cups ground lamb, shank or breast or shoulder
2 tbsp. minced onion
2 tbsp. minced parsley
2 tbsp. green pepper, chopped
1 small blade bay leaf
1 cup cooked or canned peas
2 tbsp. shortening
1 tsp. salt
1/4 tsp. pepper

Soak crumbs in milk, add other ingredients and pack firmly into well-greased casserole or baking dish. Brush top with melted shortening, bake 1 hour in moderate oven, 375 degrees.
