Baked Veal Cutlets

2 1/2 lbs. veal steak
Flour, salt, pepper
Hot shortening
2 slices onion
2 cups water
1 1/2 cups cooked, cut celery
Orange slices
Celery hearts

Cut meat in serving pieces, dredge in seasoned flour. Brown on both sides in hot shortening; remove to a casserole. Cook onion in fat in pan, add water, bring to a boil, them pour over meat. Cover, bake slowly about 1 hour. Remove meat to platter, thicken liquid with flour, add celery, heat, pour over meat. Garnish platter with slices of orange and uncooked celery hearts.
