Fricasseed Veal

  Yield/Servings: 6 servings  
 
Ingredients:
3 lbs. breast or neck of veal
Salt, pepper, mustard, flour
Hot drippings
2 onions, sliced
1/2 cup cut celery
1/2 cup cut carrot
 
Instructions:

Cut meat in small pieces, dredge well with seasoned flour, brown in hot drippings. Add vegetables and enough water to just cover meat. Cover closely. Simmer until meat is tender, about 1 1/2 hours. Transfer meat to serving platter, surround with hot boiled rice, and pour thickened gravy over rice.
