Wiener Schnitzel

  Yield/Servings: 6 servings  
Veal steaks, 1/2 inch thick
Salt and pepper
Bread crumbs
1 egg, beaten
2 tbsp. water
Poached eggs
1 lemon, sliced

Season steaks with salt and pepper, cut them into individual portions. Dip each in the bread crumbs, then in the egg to which water has been added. Dip again in crumbs. Fry in hot fat in frying pan, browning on both sides. Then cover and cook over low flame about 30 minutes, until tender. Serve with a poached egg on each portion, garnish with capers, anchovies and sliced lemon.
