Carolina Meat Pie

  Yield/Servings: 6 servings  
 
Ingredients:
1 lb. veal shoulder
1 small slice ham
Salt and pepper
1 tbsp. shortening
2 onions, chopped
2 carrots, diced
2 tbsp. flour
4 cups boiling water
1/2 cup catsup
4 potatoes, diced
1 recipe biscuit dough
2 tbsp. chopped parsley
 
Instructions:

Cut meat into 1 inch pieces. Sprinkle with salt and pepper to taste. Melt shortening and brown meat in skillet. Add onions and carrots and sprinkle with flour. When browned, add water and catsup. Simmer for 30 minutes until meat is tender. Add potatoes and continue cooking until they are done, and stew is rich and thick. Make biscuit dough and add parsley. Pour stew into baking dish. Top with biscuit dough.

Bake 15 minutes, or until biscuits are done and brown, in hot oven, 450 degrees.
