Lois's Chicken Caccitori

Ingredients:
1 chicken, skinned
1/2 onion, chopped
1 small green pepper
1 small can mushrooms
1 - 28 oz. can pulp tomatoes
1 - 8 oz. can tomato sauce
1 clove garlic, minced
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
1/2 tsp. basil
1 tsp. parsley
1/4 cup cooking sherry
2 tbs. olive oil
dash of dried crushed red peppers
1 lb. Broad egg noodles
 
Instructions:

In a big pot put skinned chicken (cut into small pieces) and 1/4 cup water and salt (keep cover slightly tipped open); simmer for about 15-20 minutes. Drain the chicken. Put oil in pot and add pepper (cut in tiny squares), onions, chicken, tomatoes, mushrooms, and spices. Cook for 1 hour on very low heat. Cover pot completely. Watch and make sure it doesn't stick to bottom of pot. If it does change pots immediately. In separate pot cook broad egg noodles. Once completely cooked serve caccitori over egg noodles.

This can also be cooked in a crock pot. Precook chicken as above, then add all the ingredients to crock pot and cook on low.

Note: Cooking sherry can be substituted with 2 tbs. wine vinegar.
