Parmesan Chicken

Chicken fryer (enough to serve four)
2 eggs
2 tbs. grated parmesan cheese
2 tbs. chopped parsley (no stems)

Beat eggs lightly with fork; stir in Parmesan slowly and add parsley, stir. Shake chicken pieces in a sack with flour, dip in egg mixture and drop in one inch of hot oil; reduce heat and cook for about 15 minutes per side. When golden shift to a shallow pan and bake at approximately 275 degrees for about an hour or until done. Cover loosely with foil for first half of the baking.

Comments: The cheese covering sticks easily when not cooked in deep oil.
